Sending Postcards from Pokemon Go to Pokemon Scarlet or Violet will give you a chance to encounter Roaming Form Gimmighoulg and collect Gimmighoul Coins. These coins can later be used to evolve Roaming Form Gimmighoul into Gholdengo.
